Why we love it...

I never say no to Vilmart. I’ve said it before – this is one of my favorite Grower Champagne houses, with a consistent quality and unique style that sets them apart from so many others throughout Champagne. This 96 point, 2015 vintage, Coeur de Cuvée is utterly spectacular – a grand spectacle of old vines and supreme elegance that is well worth the price of admission.

Plenty of critics are diehard lovers of all things Vilmart as well, from Vinous’ Antonio Galloni to the revered Champagne expert, Peter Liem – who had this to say:

“Vilmart & Cie. is not only one of the greatest grower-estates in Champagne, but one of the finest Champagne producers of any type in the region.”

We’ve shared that all before, but it’s reassuring to me that I’m not merely some misguided fan, tricked into worshiping an unworthy house! Vilmart truly is one of the greats. Founded exclusively as a Grower Champagne house (which was quite rare back in 1890), by Désiré Vilmart, Vilmart & Cie Champagne is now firmly rooted in the fifth generation under the guidance of Laurent Champs. Located on the western end of the Grand Montagne (of the Montagne de Reims) in the Premier Cru village of Rilly-la-Montagne, Laurent oversees some 11 hectares of vines – farming all organically, with an ever-increasing incorporation of biodynamic practices.

The flagship Coeur de Cuvée, or “Heart of the Blend” hails from a parcel of over 60 years old vines on the estate (that’s ancient for the harsh conditions of Champagne), and is built on a backbone of 80% chardonnay, rounded out with 20% pinot noir. The base wine ferments and ages in 228 liter Champagne barrels over an initial period of ten months, before blending and bottling to be aged on the lees for a full 72 months prior to disgorgement. No malolactic fermentation was allowed or encouraged – keeping the chiseled and bright acidity and minerality that make these powerful and voluptuous wines so perfectly balanced. A final touch of 7 grams per liter dosage completes this wine – amplifying the final result to something that borders on the sublime.

Initial aromas of toasted biscuits, lemon, orange marmalade, and honeysuckle draw you in, with accompanying flavors of bing cherries, lime leaf, lemon cream, golden apples, white nectarine, and a kiss of chervil. It deftly carries this autolytic leesy-ness throughout, with hints of unbaked sourdough boules, that never seem to distract from the pure fruit sensations. The acidity is precise and intensely bright – cutting through the richness at just the right moment to extend the finish on this almost exponentially. It’s taut and racy, with depth, complexity, and poise – this is simply all you could want in a vintage offering – a singular experience that is sure to only get more and more profound over the next several years. We don’t have much, and while it falls a touch on the splurgy side for me…this is something that is clearly too fantastic to miss! Get two if you can, or split one with a friend, but if ever there was a special-occasion bottle to pursue – this is undoubtedly it!

About the Producer

Since 1820, Ameztoi has been the mos respected producer in the region of Getariako Txakolina. They produce both traditional wines in large barrels and they were the inventor of rosé txakolina and one of the first to do méthode traditionnelle sparkling wines in the region. They own 20 hectares of vineyards planted high on the seaside cliffs of the village of Getaria. Ignacio Ameztoi is fifth generation and has played an important role in the developement and innovation in Getariako Txakolina over the last 10 years.
