Why We Love It...
We’ve been scouring the globe for a few months now, trying to find that perfect cider that would become Last Bubbles very first… et voilà! From the heart of Beaune, less than 90 miles from Champagne, we discovered Eclectik Cidery. A small collection of thoughtfully made, supremely vinous ciders – all made with the same tried and true methods that produces top-notch bubbly in the wine world. Put down the Martinellis – the real cider has arrived!
In 2020, four friends set off together on a journey to revive the ancient art of cider making in Burgundy. Véronique, Patrick, Jean-Arnaud and Jean-David all hailed from different backgrounds yet shared an appreciation of well-crafted beverages – as well as many years experience working with winemakers, distillers, and brewers across France and beyond.
They scoured local woods for wild orchards and heirloom varieties, they forged relationships with other cideries and local farmers in well-known cider producing regions like Pays d’Othe, Normandy, Brittany, Perche, and the Jura – all to build a diverse network of fruits and juice suppliers to paint their masterpieces. They rely solely on native yeasts to start their fermentation, opting for a cool and slow fermentation to preserve the delicate aromas and flavors, and ferment things bone-dry. No sugar, just a complex tapestry of natural fruit flavors – carefully enhanced and expanded through careful aging in barrels. This is the rare cider that undergoes secondary fermentation in the bottle – a la Champagne – and rarer still, the cider is disgorged and recapped following the process.
This glorious Extra Brut utilizes a blend of dozens of apple varieties – from Burgundy, Normandy, Brittany, and Pays d’Othe. Aging for this particular bottling occurs in a range of barrels, both used wine and spirits barrels, including aligoté, chardonnay, pinot noir, alongside whisky, Armagnac, Calvados, and Fine de Bourgogne. The aromas lead with a bushel full of apples, fresh, dried, slowly baked with spices, followed by notes of lemon and orange pith, sour cherries, clover honey, and fresh herbs like peppermint and marjoram. It’s delightfully heady, with a creamy texture, and a zippy and bright acidity that keeps it all hyper fresh.
Our entire team eagerly finished our glasses and went back for more – a rare occurrence on our months long journey to find Last Bubbles first cider, I assure you. This is a new producer that is restarting the conversation on quality cider in Burgundy (and beyond) and certainly worth a gander for all you bubbly lovers. Serious enough to think on, yet friendly enough to enjoy in mixed company – this is something I plan to sip on all winter long… and likely beyond! Farming Method: Organic Practices
Oak: 100% French Oak Barrels with different finishes (Aligoté, Chardonnay, Pinot Noir, Whisky, Armagnac, Fine de Bourgogne, Calvados)
Pair it with: Salmon toast with crème fraîche, chives, and red pepper jelly
About the Producer
Eclectik Cidery began in 2020 by four friends and is based in Beaune, France. Focused on varietals in Beaune, they also select and buy apple juices from cidermakers or farmers in several French regions with a rich cider-making tradition like Pays d’Othe, Normandy, Brittany, Perche or Jura. This eclectik and singular approach provides them with an extensive selection of superb juices from dozens of apple varieties, with different flavours, from different terroirs. Freshly-pressed juices are transferred to Beaune to ferment in our cellars with native apple yeasts. Barrels are selected from the wine and spirits world to match it's aromatic potential. All of their ciders are bottled as per the méthode traditionnelle like in Champagne (small addition of yeast and sugar).
